2 3/4 C flour

1 1/2 tsp baking powder

1 C sugar

1/2 stick butter (soft)

3 eggs

2 T lime juice

2 T Montello Lime Olive Oil

1 T lime zest

1/2 pkg mini chocolate chips

1 C pine nuts

Combine the flour and baking powder in a medium bowl and set aside. Cream the butter, sugar, and eggs. Add the lime juice, lime olive oil, and lime zest, then gradually add the flour mixture. Once incorporated, add the pine nuts and chocolate chips. Make into a ball and cut in half. On a baking sheet, form two logs, flatten slightly. Bake in pre-heated 375-degree oven for 20 minutes. Let cool slightly, then slice into 1" pieces. Lay flat and bake 7 minutes. Flip to the other side and bake 7 minutes more.
