1 (750ml) bottle of vodka.

3 1/2 cups of water.

2 1/2 cups of sugar.

Using a vegetable peeler, remove the peel from the lemons in long strips. Remove any pith (the white spongy layer between the fruit and the peel), as it has a very bitter taste. Place in a large pitcher. Pour the vodka over the peels, cover with plastic wrap, and store out of the light for 4 days at room temperature. Stir the water and sugar in a saucepan over medium heat until the sugar dissolves. Allow to cool completely and pour over the vodka mixture. Cover and let stand at room temperature overnight. Strain through a mesh strainer. Discard the peels. Refrigerate until cold.
