1 lb carrots 

2 Tbsp Arbequina Extra Virgin Olive Oil

2 Tbsp honey

2 tsp Traditional Dark Balsamic Vinegar

Salt and pepper, to taste. 

Preheat oven to 400 degrees. Peel the carrots. If the carrots are large, slice them in half. Line a baking sheet with parchment paper or foil. In a small bowl, whisk together the olive oil, balsamic vinegar and honey. Brush over the carrots and lay one layer on the baking sheet. Season with salt and pepper. Bake for 25-30 minutes, flipping halfway through. Garnish with rosemary, if desired.
